Chef Bhardwaj’s journey began in a household where food was more than just sustenance—it was a cherished tradition. Yet, the hospitality industry remained uncharted territory for him until his mid-teens. It was during this period, observing the operational challenges of a busy kitchen, that Akshay’s curiosity about the culinary arts was sparked in his father’s food joint . His early experiences, from assisting with basic upkeep to managing deliveries, laid the groundwork for his future in hospitality exposure.

Despite these initial hurdles, Akshay’s passion for the culinary world remained undeterred. Although he initially pursued a path through the National Defence Academy (NDA), his focus shifted dramatically to the hotelier school, marking the start of a significant transformation in his life. This decision was pivotal, setting the stage for a career defined by innovation and excellence.

During his college years, Akshay earned a prestigious exchange program to France, immersing himself in a different culinary culture. This experience was not just an academic opportunity but a profound journey that honed his skills and introduced him to the rigorous disciplines of the culinary arts.

Upon returning to India, Chef Akshay began his professional journey as a Culinary Management Trainee with IHHR Pvt Ltd. His dedication and hard work saw him progress from stewarding to shadowing the Executive Chef, gaining invaluable insights into the intricacies of the hotel industry. His exceptional performance was recognized with a scholarship for an MBA in International Tourism from France, further expanding his expertise.

Chef Akshay’s career trajectory took him across Europe, including Belgium and France, where he honed his skills in boutique hotels and Michelin-starred restaurants. His role as a commis in a French kitchen, despite not speaking the language, showcased his adaptability and eagerness to learn. His global journey continued with Oceania Cruise Lines, where he explored diverse cultures and ingredients in South America.

Today, Chef Akshay Bhardwaj stands as a distinguished culinary professional with over 15 years of international experience. As the Executive Chef for Colours of Oblu Xperience and Select Lobigili, two innovative resort properties in the Maldives, he oversees seven outlets and manages a team of 85 chefs in his brigade. His experience enhances further in leading new projects from scratch to operational stage , creative additions to restaurants and Hotels F and B  .

Chef Akshay’s commitment to culinary innovation extends beyond traditional practices. He champions defining food by its ingredients rather than being confined to specific cuisines. His early specialization in Italian cuisine evolved into a broader embrace of local and healthy culinary concepts. His dedication to sustainability and local ingredients was highlighted during his TEDx talk, where he advocated for sustainable food practices.

Chef Akshay’s contributions to the culinary world have earned him notable accolades, including being named Executive Chef of the Year 2022 by the Indian Restaurant Congress and Franchise India. His representation of India in the 6th World Tapas Competition in Valladolid, Spain, further underscores his leadership in high-end gastronomy.
